This site has a set of high resolution multi-touch vector icons that are scalable and alterable (.pdf, .ai, .eps file types) and can be used for wire-freaming when designing your app.
It is free to use under a Creative Commons License. Just link back to the website and email them to ask about using these within your commercial projects. They are okay with using these in commercial projects for wire-framing purposes without any agreement, but not within commercial applications, websites, magazines, etc.
